This gorgeous perennial vegetable is hardy to zone 7 and takes even colder winters with a thick layer of mulch or strawbale placed over the roots in the winter. Its flavor is starchy and mild with notes of nutty sweetness, and a soft texture.
 
Left unmanaged this plant slowly spreads into a larger and larger climb as time goes and makes an excellent addition to landscapes with its striking similarity to the common landscaping plant known as canna lily. This species gets a bit taller and has wider leaves giving it even more of a tropical feel than its ornamental sibling.
 
Yields of over 15 gallons from a single tuber have been achieved with very little maintenance or soil preparations. Fort best results plant this species in rich well drained soil in a full sun location.
